Garlic Mashed Potatoes

YIELDS     10 – 12 SERVINGS

  • 8 – 10     MEDIUM SIZED REDSKIN POTATOES (COOKED UNTIL TENDER)
  • 1 CUPS SOUR CREAM
  • 2 CUPS BUTTER
  • 2 TSP SALT
  • 2 TSP BLACK PEPPER
  • 1 TBS GRANULATED GARLIC

BOIL POTATOES UNTIL TENDER (SLIDING OFF A BUTTER KNIFE IS A GOOD INDICATOR)
STRAIN EXCESS WATER AND PLACE INTO MIXING BOWL OF KITCHEN AID.
USING THE WIRE WHIP ATTACHMENT, CRUSH POTATOES THOROUGHLY BEFORE HOOKING UP THE WHIP.
ADD ALL OTHER INGREDIENTS AND WHIP ON MEDIUM SPEED UNTIL POTATOES ARE LIGHT AND FLUFFY.
NOTE ADDITIONAL BUTTER MAY BE REQUIRED DEPENDING ON SIZE OF POTATOES, TO REACH DESIRED CONSISTENCY.
