Pineapple and Maple Glazed Ham

Ingredients Glaze

  • 1 cup brown sugar
  • 1 cup maple syrup
  • 1 cup pineapple juice
  • 2 tablespoons ground ginger
  • 1 tablespoon ground sage
  • 2 tablespoons Worcestershire sauce

Ingredients Yield 1 18 – 20 lb Ham

  • 1 whole city ham scored   (as in not a country ham!)
  • 1 small can sliced pineapple rings
  • ¼ cup liquid smoke

Directions – Glaze

In a small saucepan combine all ingredients over medium heat until glaze becomes thick and sticky.
Allow sauce to cool before using.

Directions – Ham

Using a sharp knife slightly score ham through skin diagonally about 1 inch apart.
Liberally apply glaze.
Using toothpicks attach pineapple rings thoroughly covering ham.
In a separate pan place ¼ cup of liquid smoke in the bottom of Alto Sham.
Bake in Alto Sham at 280 degrees for 1 – 2 hours until ham is heated throughout and skin is a dark crispy color.
