Turkey Gravy

Ingredients Yields 1 ½ Quarts

  • 4 cups Turkey drippings (or Turkey Stock)
  • Turkey livers and hearts from Turkey
  • 2 large onions minced fine
  • 3 cloves garlic minced fine
  • ½ cup all purpose flour
  • ¼ cup olive oil
  • 2 tablespoons ground sage
  • 2 tablespoons ground pepper
  • 1 tablespoons kosher salt
  • 1 tablespoon onion powder


In an 8 quart sauce pan on medium heat add oil and heat pan.
Add minced onions and sauté about 2 minuets before adding garlic, seasoning, and turkey innards, then sauté until innards are cooked thoroughly.
Transfer innards and onion mix to food processor and puree until smooth and pasty.
Return to sauce pan add flour and cook for an additional 2 minuets until pasty and lightly browned.
Add turkey drippings mix well and simmer until desired consistency.
