Yankee Pot Roast

Ingredients     Yields 8 lbs of Beef

• 10 lbs center cut top round with fat cap on
• 2 whole onions chopped 1 inch
• 3 carrots sliced ¼ inch thick
• 2 stalks celery sliced ½ inch
• 2 tablespoons granulated garlic
• 1 table spoon kosher salt
• 1 tablespoon cayenne pepper
• 1 tablespoon black pepper
• 1 tablespoon ground sage
• 4 cups beef stock

In a 1 quart bowl mix seasoning thoroughly creating beef rub.

Generously apply rub to both sides of beef and pan seer each side until browned.

In a 4 inch hotel pan place beef on screen wrack lifting the beef from the bottom of the pan.
Poor beef stock in the bottom of the pan.
Spread onions, celery, any left over beef rub, and carrots over the beef.
Cover with aluminum foil tightly and bake at 325 degrees for 3 – 4 hours until fork tender.
